Honey Grilled Asparagus with Whipped Feta
Asparagus season is here! And we finally got to harvest our first stalks today!
Once established, an asparagus patch is the gift that keeps on giving. They’re low maintenance and reliably return every spring. I love any plant that makes me look like a punctual gardener. Or fills my belly with grilled honey asparagus. We planted these little guys about 3 years ago….so needless to say we are pretty stoked
First things first…what makes a simple recipe truly shine is fresh, peak-season produce. Learning this is what led me to gardening in the first place, after all. When your ingredients are high quality, you don’t need a fancy pancy little recipe to make something absolutely delicious.
Grilled honey asparagus is a perfect example of this. Fresh asparagus, good quality olive oil, a little Fat Head Honey of course, salt, pepper and you’re set.
We personally love these lovelies over a platter of whipped feta though…it really elevates the flavors even more. So if you’re feeling it…take it to the next level.
INGREDIENTS
Honey Grilled Asparagus
1 lb fresh asparagus
1 tbsp olive oil
2 tsp Hickory Smoked Fat Head Honey
salt + pepper
Whipped Feta
8 oz block feta cheese
1/4 cup of greek yogurt
2 tbsp olive oil
1 tsp Fat Head Honey
lemon zest
INSTRUCTIONS
Preheat grill to 400–450 degrees.
Blend feta, greek yogurt, olive oil, honey and lemon zest in food processor. Pulse until completely smooth and creamy.
To serve, spread the whipped feta over your serving platter.
Rinse asparagus and allow to dry. Break off woody stems if necessary. Brush asparagus spears with olive oil, drizzle evenly with smoked honey, and sprinkle with salt & pepper.
Add asparagus to grill, grilling 1–2 minutes per side until slightly charred.
Place honey grilled asparagus over the whipped feta.
Garnish with your liking. We personally adore fresh dill, feta crumbles, toasted almonds or even foraged lilac or violet blossoms.
